Made by the Charmat method — a second fermentation in tank — the first sparkling wines of the Dalmatian Ego brand have arrived. Bubble M is from Maraština, a white Dalmatian variety prized for its elegance and freshness. It shows fine citrus and floral aromas and pronounced minerality, thanks to the stony soil and proximity to the sea. It is priced at 12.90 euros. Bubble B is a new face of Babić, the celebrated Dalmatian red variety, and costs a euro more. In its sparkling guise it keeps its character but turns fresh, structured and spicy, with aromas of red berries, apple and Mediterranean herbs. Both wines are in the brut category. 
The labels capture the philosophy of sparkling wine as a state of mind: playful dots echo the wine’s mousse, while unconventional colours signal varietal character — pink for Babić, sunny yellow for Maraština.
